Colour: Pale lemon skin in colour with a pale green hue.
Aroma: Rich aromas of gooseberry, lime and lemon are the dominant characters with a hint of
citrus.
Palate: Crisp and refreshing, slightest touch of fruit sweetness right at the front. Dry palate, silky
luscious mouthfeel that lingers pleasantly and a balanced acid structure.
Wine making: Second attempt at this classic variety and I decided to go in a different direction
this time by leaving it on the vine for a bit longer to develop richer flavours and once harvested
to treat it as naturally as possible. Handpicked, pressed into stainless steel, no additions added at
all, naturally fermented but temperature controlled to retain the lighter, crisp and refreshing style.
After ferment, removed from the lees to naturally settle and bottled early. You may notice some
crystals at the bottom of the bottle, don’t be alarmed these are called ‘wine diamonds’ or
potassium Bitartrate. They are completely harmless and appear when a wine is kept below 4
Degrees Celsius for a short time, they don’t affect the taste of the wine at all and are safe to
consume.
