Fruit Source: Long Rail Gully Vineyard, McKellar Ridge Vineyard

Colour: Very deep red with a clear edge

Aromas: Black currant, soft, savoury with an elegant spice

Palate: Elegant and spicy, rich and balanced mid palate tapering off to a lingering finish.

Winemaking: Two seperate clones of shiraz, 1127 and PT10. Both parcels where hand picked and brought into the winery at optimum ripeness. Majority of the fruit was de-stemmed with about 25% of each parcel remaining as whole cluster. The parcels were left to cold soak for 3 days before left to gradually warm up and inoculated with re-hydrated yeast. Gently worked over for 2 weeks and towards the end of ferment the vessels were sealed air tight and left to macerate for a further 2 weeks before being pressed off to seasoned French oak for up to 12 months. Transferred out of oak to stainless steel let to naturally settle for 2 months then bottled.
