Wine making: A three-way white Rhone variety blend of Marsanne, Roussanne and Viognier. The
Viognier was first in, de-stemmed and given a 4-day skin contact soak before being pressed off in
old oak for a wild fermentation for 2 weeks until dry. Left to settle then racked to a stainless-steel
tank to develop for 3 months. The Marsanne and Roussanne were whole bunch pressed together
to stainless steel and left to settle for 24 hours then only clean juice was transferred to old oak
barrels for a controlled fermentation lasting 2 weeks until dry. The barrels were topped and
sealed for 3 months to develop. After the development period, all parcels were blended and given
a touch of acid adjustment to refresh the palate and lift the aromatics before being bottled.
