Colour: Very deep red with a clear edge
Aromas: Black currant, soft, savoury
Palate: Balanced, well rounded and lingering. Silky with a firm acid structure and a lingering
tannin mouthfeel tapering off to a long finish.
Wine making: A non-vintage Bordeaux blend wine from 2 vintages, Currently from harvests 2021
and 2022. Over the years will show more harvests and more varieties from the Bordeaux region.
Production is kept simple and handled the same year after year to show the expression of the
fruit from that year. Ferment is run as a standard “whole berry” fermentation for a period of 2
weeks and left to macerate for a further 7 days while the berries are still warm to extract as much
tannin and flavour from the skins as possible. The grapes are then pressed off and left to run a
malolactic fermentation before being blended in with parcels from the previous years to keep the
blend fresh and retain natural acidity before left to naturally settle and then bottled.
